I'd stay away from the Intel motherboard, go with ASUS or Gigabyte... I have blown a Gigabyte motherboard before, when overclocking. I put in an RMA and told them I overclocked it, they told me to send it back, and I had a new board in a week... No questions asked...
Cut back on the ram, unless you run 15 applications at a time, you;ll never use over 4Gigs, and 8gigs doesn't make your system any faster, unless you do run 15 or more applications at once... Go with DDR3 1600 1.5Volt ram... For the price of that ram you were going to buy, get a SSD hard drive and put your operating system on it, and use your 1TB drive for storage, divided up into 3 partitions... When you go to install your operating system, partition the SSD and then select to partition the 1TB into 3 equal parts at the same time. You can format all the drives there, or just format the SSD and then format the 1TB hard drive later in windows...
There is no way that 2 5850;s will be faster than 1 5870 on that motherboard, so unless you are getting a great deal, just go for the 5870 1gig for $400 and be done with it... You can actually get a cheaper PSU than one needed for 2 5850's. If you are really hard core, drop the LCD monitor, with the savings from the extra 5850, and go to Best Buy and buy you a 32" LCD HDTV... It is one thing to brag to people about gaming on a 23" high resolution monitor, it is another to game on a 61" HDTV at 1920x1080 as I do...
